Air or water condensation

The air condensation system is the most common: the machine evacuates heat from its compressor through a fan. It is simple to install, economical, and suits most work environments. However, leave a minimum ventilation space around the appliance (10 to 15 cm on the sides, more at the back) so as not to suffocate the condenser and degrade performance.

The water condensation system is used in very hot kitchens or poorly ventilated rooms: heat is evacuated through a water circuit, which improves refrigeration efficiency but increases water consumption. This option is rather reserved for professional installations with dedicated water supply and allows stable production even at high ambient temperatures.

With or without integrated storage

An ice machine with storage directly stores production in an insulated bin located under the manufacturing module. Staff only need to open the door and scoop ice. It is the simplest and most used option in the horeca sector. A stainless steel ice machine requires three connections: electricity (220-240 V standard), filtered cold water supply and waste water drainage. The water supply must be equipped with an accessible shut-off valve and a filter to protect the machine from scale and suspended particles. Drainage is generally done by gravity to a nearby siphon, respecting the minimum slopes recommended by the manufacturer.

Scale is the number one enemy of ice machines. In a hard water region like most of Belgium, installing a softener or dedicated filter significantly extends the machine's life and preserves ice purity. Annual descaling by a qualified technician remains recommended even with filtration in place, especially for high-throughput machines.

Buying the right professional ice machine
